Buffalo Chicken and Blue Cheese Grits

skinless, boneless chicken breast halves (4 ounces each)

cup buffalo wing sauce

cups chicken broth

cup Quaker® Quick Grits

cup (4 ounces) crumbled blue cheese
1/4
cup sour cream
1/4
tsp ground black pepper
1/4
cup chopped green onion
Preparation Steps
1. Preheat oven to 350¡F. Place chicken breasts in lightly greased baking dish. Pour buffalo wing sauce over chicken. Bake 18-20 minutes or until centers reach 170 F. Remove chicken from oven and keep warm.
2. Bring chicken broth to a boil in medium saucepan. Slowly stir in grits; return to a boil. Reduce heat to medium-low and cook 2 minutes; stir in blue cheese. Cook an additional 2-3 minutes or until thickened, stirring occasionally.
3. Remove from heat; stir in sour cream and pepper. Divide grits among 4 shallow bowls. Cut chicken breast into thin slices and place on top of grits. Sprinkle with green onions and serve.
